Broccolini with Fetta, lemon/lime juice & Anchovie

Quick Blanche of the broccolini remove water from pot then crumble in fetta on top add anchovies so they melt, season with salt & pepper then add lime or lemon juice

Frillice, cucumber ribbon and herb salad, white muscat vinegar dressing

Sounds pretty impressive it’s easy though, frilly lettuce cleaned and torn, cucumber ribbon(made with your vegetable peeler and a mix of any fresh herbs mix season salt & pepper and dress with a regular or white balsamic.


Olive oil mash

choose a potato you don’t eat often maybe kiffler boil until really soft then use your ricer a little butter and a splash of olive oil, mix well with a wooden spoon add some warm milk and season to taste.


Tomato & basil salad, tomato vinaigrette-(olive oil, balsamic, garlic& sundried tomato)

Sliced tomatoes with fresh shredded basil leaves and the vinaigrette above, could also add bocconcini cheese and it will be a caprese salad.


Beans Tossed with Golden Shallots

Simple one, use nice fresh green beans quick blanche off and then in a pan sauté either golden shallot(fancy French garlic) or garlic in olive oil then cook off your beans for a couple of minutes coating all the beans in oil and golden shallot, season salt and pepper.

Rocket Lettuce, Sweet Corn & Parmesan Cheese

Use any lettuce you have, uncooked fresh corn off the cob and some nice parmesan shavings season dress with a vinaigrette and serve (the fresh uncooked corn is beautiful)
