Anchovies with Fennel

Serves 2

12 fresh anchovy fillets, cleaned, washed and dried
½ tablespoon fennel seeds lightly crushed
1 tablespoon olive oil
2 cloves garlic, finely chopped
1/3 cup dry white wine
Salt
Freshly ground pepper

1. Place garlic and oil in a shallow pan, fry on medium heat.

2. Once the garlic starts to colour place anchovies in one layer in the pan. Season with salt and pepper.

3. Sprinkle fennel seeds over the anchovies.

4. Add white wine and cook for 5 minutes.

5. Delicately turn the anchovies and serve hot with pan juices.
