Atlantic Salmon
Pan Seared Atlantic Salmon with Wilted Spinach and Yellow Tomato Dressing
Yellow Tomato Dressing Ingredients:
- 1 punnet of Teardrop Yellow Tomatoes
- 2 cloves of garlic
- 1 large Golden Shallots
- 150ml Extra Virgin Olive Oil
- 100ml Tarragon Vinegar
- Chervill Picked
Method:
In a bowl combine the Tomatoes and Vinegar
Blitz these ingredients in food processor and pass through sieve
Emulsify with hand Blender
Add Olive Oil
Chop Garlic and Shallots and add to the Dressing
Add Chervill and Chill
Salmon:
In a hot non-stick pan cook the Salmon with skin on until medium-rare
Spinach:
Sautéed the Spinach with a bit of Olive Oil and Chopped Golden Shallots
